Minestrone Soup
Ingredients:
- celery
- 1 can white beans
- green beans (cut into quarters)
- 1 clove of garlic
- 1 onion
- carrots
- 14 ounces canned diced tomatoes
- 1 tablespoon pepper
- 1 lb. stew beef
- 15 cups of water
- 5ish beef bouillon cubes
Directions:
This is also super easy, and we've been prepping it on Sundays and having lunches finished for the entire week. This is healthy and delicious (especially with the added beef). The only thing for this one is you have to do first is brown the beef. Make sure it's cooked on the outside on the stove before dropping the meat into the stew. We've never skipped this step, but the internet says that you miss a lot of flavored if not cooked in advance.
Also, this one needs a lot of time. We need to make sure we wake up and cook this first. It takes about 10-11 hours (the more time in the crock pot the better).

After that just dump everything. Make sure it is all finely chopped, and then let it sit on low in the crockpot for 10-11 hours. Time is everything for this one. |

Kyle and I have a lot of fun making this one. Just about every ingredient is fresh, and to make the broth you just pour in water. It feels healthy and is so yummy. It takes a little time to prepare, but it's fun to hang out in the kitchen, goof off, talk, and watch TV. Sundays since Kyle has moved home have gone from a day of dread to one of my favorite and most relaxing days of the week. We meal prep and cook together. There's something very satisfying about making meals and now it's even better because I'm doing it with someone I love. |
